STIR-FRY chicken breasts with sliced red & green peppers, carrot, celery stalk & green onion. Add broccoli florets.
COMBINE salad dressing and peanut butter in a medium saucepan over low heat. Add ginger and garlic and continue to cook for 5 minutes. Add water, whisking to combine.
TOSS peanut sauce with chicken and vegetables and serve on prepared rice.
