I always look for recipes that I can manipulate based on ingredients I have on hand. This one was a fabulous start. Here's what I did. I had no zucchini, had a large salmon, and spinach cream cheese. I followed the recipe otherwise, and topped it with fresh chopped tomato, not cooked ones; added a side of cauliflower. The kids LOVED it!!! My husband said it was a keeper. It wasn't overly spiced and still a fresh and pleasant flavor, something we try and look for with 4 kids with very different tastes. Definately added to my recipe box.
