This is an easy, quick recipe but it needs to be updated. First of all, it calls for 6 tortillas but indicates it serves 4....it definitely serves 6. Secondly, warm up the tortillas to make them more pliable to "mold" into your muffin cups (use the large cup size tins, by the way). Thirdly - and most important - GREASE THE TINS. I did not and it took a lot of soaking to get the tins clean afterwards (my tins are non-stick & in good shape - the tortillas leaked a bit and boy, what a mess to clean). Other than this, these received rave reviews from my husband. (I added a sprinkle of mexican-type seasoning to the egg mixture, just to add some zing. Good!)
