Terrific recipe - I am a vegetarian, and I love cheese, so I made a quick one-pot rice pilaf by cooking up the rice with corn and my leftover veggies, and I used vegetable broth instead of water for added flavour. At the end, I stirred in a cup of shredded cheese and a cup of cottage cheese - this was the perfect finish to a great dish! By the way - there were no leftovers!
