Orange Walnut Salad

What You Need

1/3 cup orange juice
1/3 cup red wine vinegar
1/4 cup oil
2 Tbsp. sugar
1 tsp. grated orange zest
8 cups torn crisp salad greens
2 medium cucumbers, thinly sliced
2 cans (284 mL each) mandarin orange segments, drained
1 cup toasted walnut pieces
1/4 cup sliced green onions

Make It

BLEND orange juice, vinegar, oil, sugar and orange peel in small bowl until well blended. Refrigerate until serving time.

MIX salad greens, cucumber, oranges, walnuts and green onions in large salad bowl. Pour dressing mixture over salad; toss to coat well. Serve immediately.

Cooking Know-How
To toast walnuts spread in single layer on baking sheet. Bake at 300°F for 10 - 15 minutes or until lightly toasted.
