Pan-Seared Duck with Blueberry Sauce recipe

What You Need

1 cup frozen blueberries
1/3 cup apple jelly
1/4 cup port wine
3 Tbsp. Kraft Signature Balsamic Vinaigrette Dressing
2 large duck breasts (1-1/4 lb./565 g)

Make It

COOK first 4 ingredients in small saucepan on medium-high heat 13 to 15 min. or until thickened to syrup-like consistency, stirring frequently.

MEANWHILE, use sharp knife to make 1/4-inch-deep parallel cuts, about 3/4 inch apart, in top surface of each breast. Make additional scores at right angles to form diamond shapes.

HEAT large skillet on medium heat. Add duck, skin-sides down; cook 9 min. or until skin is crisp and golden brown. Turn over; cook 5 min. or until done (170°F).

TRANSFER duck to cutting board; let stand 5 min. Slice duck; serve with blueberry sauce.

Best of Season
When fresh blueberries are in season, prepare sauce using 1-1/2 cups fresh blueberries.
Pan-Seared Duck with Citrus Sauce
Omit blueberry sauce. Cook 3/4 cup orange juice, 1/2 cup orange marmalade, 2 Tbsp. orange liqueur and 1/2 tsp. of grated gingerroot in small saucepan on medium-high heat until thickened, stirring frequently. Serve over duck.
Where to Find Duck
Look for duck breasts in the frozen meat section of most larger grocery stores. Or they can often be found sold fresh in specialty markets.
