What You Need

1 lb. (450 g) sweet potatoes (about 2), peeled, cut into 1/2-inch cubes

1 lb. (450 g) red potatoes (about 3), unpeeled, cut into 1/2-inch cubes

1 onion, cut into 1-inch chunks

1/2 cup Kraft Zesty Italian Dressing

1 pork tenderloin (1 lb./450 g)

1 env. Shake'N Bake Pork Coating Mix

Make It

HEAT oven to 450°F.

COMBINE first 4 ingredients; spread onto bottom of 15x10x3/4-inch pan.

COAT meat with coating mix as directed on package. Discard any remaining coating mix. Place meat over vegetables.

BAKE 25 to 30 min. or until done (160°F), stirring vegetables after 15 min. Let stand 5 min. Slice meat. Serve with vegetables.

Substitute

Substitute butternut or acorn squash for the sweet potatoes.

Veggies took almost 45 mins to cook! I also used turnip instead of potatoes. I would start the veggies on their own for about 20-25 mins. I also added some grated parmasean cheese to the veggies after.

use a meat thermometer definitely. no way it'll be done in 30 min. i used one and it came out perfectly. i doubled the veggies. tad bland so i added seasoning to shake & bake, some seasoning salt and greek seasoning.

This has become a staple in our house. It always turns out well and the kids love the sweet potatoes. We have also added carrots to the mix.

I used regular breadcrumbs instead of the shake and bake and added italian seasoning to the crumbs. I didn't hae sweet potatoes, but I added green peppers. It turned out so delicious and flavorful! I cooked it about 10 minutes longer than called for and it was perfect.

After reading the comments, I planned this recipe to cook for an hour. I found the taste a little blend. Not sure if I would do it again. If I do, I would have to think of something to give it more punch.

I made the recipe without sweet potatoes - the timing was bad, the potatoes, onions and pork were not cooked and the ShakenBake did not adhere to the tenderloin well at all. I had to keep on cooking and finally put it in the microwave to finish. My husband didn't like it at all.
