What You Need

3 fresh red pears (9-1/2 oz./270 g), finely chopped
1/4 cup coarsely chopped walnuts, toasted
1/2 cup chopped fresh parsley, divided
1/2 cup Kraft Calorie-Wise Balsamic Vinaigrette Dressing, divided
1-1/4 tsp. ground cumin, divided
4 cloves garlic, finely chopped
1 center-cut pork loin roast (4 lb./1.8 kg)

Make It

HEAT oven to 425ºF.

COMBINE pears, nuts, 1/4 cup each parsley and dressing, and 1/4 tsp. cumin. Refrigerate until ready to serve.

MIX remaining parsley, dressing, cumin and garlic. Place meat in roasting pan or shallow baking dish; brush with dressing mixture.

BAKE 10 min. Reduce oven temperature to 325ºF. Bake 1 hour 40 min. or until meat is done (160ºF). Let stand 10 min. before slicing. Serve with the pear salsa.

Pears will continue to ripen after they have been picked. Leave them on the counter until they are ripe. If they ripen before you are ready to use them, store them in the refrigerator until ready to use.
Substitute
Prepare using apples.
