PREHEAT oven to 400ºF. Pour 3 Tbsp. of the dressing and the soy sauce into large resealable plastic bag. Add chicken. Seal bag; turn to evenly coat chicken with dressing mixture. Refrigerate 1 hour to marinate.
REMOVE chicken from marinade; discard marinade. Thread chicken evenly onto 16 wooden skewers; place on foil- or parchment paper-covered baking sheet.
BAKE 12 min. or until chicken is cooked through. Meanwhile, mix remaining dressing with the peanut butter and water. Serve as a dip with the chicken.
