EMPTY contents of coating mix into a large plastic bag. Moisten chicken with water and shake off excess. Shake chicken in coating mix until evenly coated.

PLACE chicken breast side down in a microwaveable baking dish. Cover loosely with waxed paper.

MICROWAVE on HIGH power for 8 minutes per lb (2.2kg). Turn chicken halfway through cooking. Let stand 5 minutes before carving. Serve with your favourite steamed vegetables.
