Made this last night for dinner. I didn't use the green pepper (family preference)- instead, I used half a medium Walla Walla (sweet) onion, chopped; 3 ribs of celery, chopped; and 3 cloves of garlic, finely chopped. I left out the paprika, used boneless skinless chicken breast instead of thighs, substituted low-fat cream of chicken soup, and substituted 1 cup of low-fat/low sodium grated real Cheddar cheese for the (yuck) Cheez Whiz. I mixed the soup with 1 soup can of hot water before pouring it over the chicken; this made ample sauce and kept everything moist. I only added a few drops of Worcestershire sauce at the end, and left out the parsley altogether. I'll make this again, but next time I'll slice the potatoes a bit more thickly (I sliced mine 'very thinly' like the recipe says and they pretty much dissolved during cooking time) and I'll use mushrooms instead of celery, and no garlic.
