What You Need

1-1/2 lb. bonless, skinless chicken thighs
1 onion, chopped
3 potatoes, cubed
1 apple, chopped
2 Tbsp. curry powder
1 can (10 fl oz / 284 mL) chicken broth
2 cups frozen peas, thawed
2 cups uncooked instant white rice

Make It

PLACE chicken in slow cooker; top with onion.

ADD potatoes, apple, curry powder and broth. Cover with lid and cook on LOW for 8 to 10 hours (or on HIGH for 5 hours).

STIR IN peas and rice. Cover and cook an additional 20 min.

Easy Cleanup
To speed the cleanup, spray the inside of the slow cooker with no stick cooking spray before filling with ingredients.
Spice It Up
For a stronger curry flavour use medium or hot curry powder. Add 1/2 tsp. ground cumin, ginger or coriander for a more authentic flavour.
