What You Need

1 Tbsp. oil
4 boneless skinless chicken thighs (1 lb.)
1 medium onion, chopped
1 medium green pepper, chopped
1 can (14 fl oz/398 mL) Italian-style stewed tomatoes
1 can (10 fl oz/284 mL) chicken broth
1 cup frozen peas
1 tsp. crushed red pepper
1 tsp. ground turmeric
1-1/2 cups instant white rice, uncooked

Make It

HEAT oil in large nonstick skillet on medium-high heat. Add chicken, onion and green peppers; cook until chicken is cooked through, turning chicken and stirring vegetables occasionally.

ADD remaining ingredients; stir. Bring to boil; cover.

REMOVE from heat. Let stand 5 min. Fluff with fork.
