Sparkling Tree Cakes

What You Need

1 pkg. (2-layer size) yellow cake mix
1/4 tsp. green food colouring
1 pkg. (250 g) Philadelphia Brick Cream Cheese, softened
1 cup icing sugar
1-1/2 cups thawed Cool Whip Whipped Topping
16 peppermint sticks (3-inch)
1/2 cup flaked coconut
2 squares Baker's Semi-Sweet Chocolate, chopped
1/4 cup dry roasted peanuts, chopped
Assorted Christmas candies
Coloured sugar

Make It

PREHEAT oven to 350°F. Lightly grease and flour two 9-inch round cake pans; set aside. Prepare cake batter as directed on package. Tint batter with food colouring. Pour evenly into prepared pans. Bake as directed on package. Cool in pans 10 min.; remove to wire racks. Cool completely.

BEAT cream cheese and icing sugar in small bowl with electric mixer on medium speed until well blended. Add whipped topping; stir until well blended. Spread evenly onto tops and sides of cakes.

CUT each cake into eight wedges to resemble Christmas trees. Insert peppermint stick into bottom of each cake for the tree trunk. Decorate trees with remaining ingredients. Store in refrigerator.

Special Extra
To decorate trees with tinted coconut, just mix 1/4 tsp. water with a few drops of food colouring. Add to coconut in resealable plastic bag; seal bag. Shake until coconut is evenly tinted. For a darker shade, add additional food coloring to the water; seal bag and shake until evenly tinted.

Sweets can add enjoyment to a balanced diet, but remember to keep tabs on portions. One serving of this cake is one 'tree'.
