Spicy Mango Salsa

Spicy Mango Salsa recipe

what you need

4 cups peeled, pitted, finely chopped ripe mangos
1/2 cup finely chopped onions
1/2 cup chopped red pepper
2 jalapeño peppers, finely chopped
1/4 cup finely chopped coriander
2 garlic cloves, finely chopped
1/4 cup white vinegar
2 limes
7 cups sugar
2 pouches Certo Liquid Pectin

COMBINE prepared mango, onions, peppers, coriander, garlic and vinegar into a large saucepan.

GRATE rind and squeeze juice from limes. Add to mango mixture.

ADD sugar and mix well.

PLACE saucepan over high heat. Bring to a full rolling boil and boil hard 1 minute, stirring constantly. Remove from heat.

IMMEDIATELY stir in liquid fruit pectin.

STIR and skim foam for 5 minutes to prevent floating fruit.

POUR quickly into warm, sterilized jars filling up to 1/4 inch from rim.

SEAL while hot with sterilized 2-piece lids with new centers.

Serve as a complement to grilled sea bass, halibut and other light fish. Use as a topping for grilled chicken wraps or pita sandwiches.
