What You Need!

1 can (19 fl oz/540 mL) no-salt-added diced tomatoes, undrained
1/2 tsp.  dried oregano leaves
2 cups multi-grain penne pasta, uncooked
1 cup  water
7 cups baby spinach leaves
1 cup  KRAFT Part Skim Mozzarella Shredded Cheese

Make It!

BRING tomatoes, oregano, pasta and water to boil in large saucepan; stir. Cover; simmer on medium-low heat 11 min. or just until pasta is tender, uncovering after 10 min.

ADD half the spinach; simmer, covered, 2 min. or until wilted. Stir. Repeat with remaining spinach.

SERVE topped with cheese.

For a spicier dish, add 1/4 tsp. crushed red pepper or hot pepper sauce along with the tomatoes.

" Very YUMMY! What a great way to incorporate spinach into our diets. I cooked about 3 slices of bacon (will use a little more next time)in the bottom of a pot until crispy. Drained the grease and then cooked an onion chopped very small and then added the rest of the ingredients. I only had regular spinach at the time so I just removed the larger stems. The tomatoes I used already had garlic added otherwise I would have added a clove with the onion. I crumbled the bacon back into the mixture at the end. I will make this again often!"
