MIX graham crumbs and butter, press onto bottom and up side of 9-inch pie plate. Add boiling water to jelly powder in large bowl; stir with whisk 2 min. until completely dissolved. Stir in dry pudding mix until well blended.
WHISK in 1 cup Cool Whip; pour into crust.
REFRIGERATE 3 hours or until set. Top with strawberries and remaining Cool Whip just before serving.
