I marinated the Cod in it's own juice, the sun dried tomato and oregano dressing, minced garlic, and a pinch of dried chili peppers,
I served the dish over Basmati Rice, it was delicious!
I also used more than 2 tbsp of the dressing when cooking the onions, I wanted them to get caramelized, and have a good sauce to add to the dish.
Overall, I extremely enjoyed this dish, and I will definitely be making this again in the future!
