Celery root, or celeriac, is a knobby brown vegetable that is the root of a special variety of celery. It tastes like a cross between celery and parsley and is a great addition, when used either raw or cooked, to salads, soups or stews. Look for it in the produce section of most grocery stores and at farmers' markets.

Prepare as directed, substituting your favourite salad green, such as mesclun, spinach or mache, for the arugula.
