What You Need

1-1/2 lb. (675 g) sweet potatoes, cut into large chunks, cooked and cooled
4 stalks celery, diagonally sliced
1/4 cup finely chopped fresh parsley
1/2 cup Miracle Whip Calorie-Wise Dressing
2 Tbsp. each: honey and lemon juice
1 tsp. grated gingerroot

Make It

COMBINE potatoes, celery and parsley in large bowl.

MIX remaining ingredients. Add to potato mixture; toss to coat. Cover.

REFRIGERATE several hours or until chilled.

Substitute
Substitute 1/2 to 3/4 tsp. ground ginger for the grated fresh gingerroot.
