What You Need

1/2 cup long-grain brown rice, uncooked
1 cup chopped mangos
1/4 cup finely chopped cucumbers
2 Tbsp. finely chopped red onions
2 Tbsp. Kraft Calorie-Wise Balsamic Vinaigrette Dressing, divided
2 tsp. canola oil
2 tilapia fillets (1/2 lb./225 g)

Make It

COOK rice as directed on package. Meanwhile, combine mangos, cucumbers, onions and 1 Tbsp. dressing; set aside.

HEAT oil and remaining dressing in large nonstick skillet on medium-high heat. Add fish; cook 3 min. on each side or until fish is browned on both sides and flakes easily with fork.

SERVE fish with rice and mango salsa.

Special Extra
Add 1 Tbsp. finely chopped jalapeno peppers and 2 tsp. lime zest to prepared salsa.
Substitute
Prepare using another firm white fish, such as basa fillets.
