SLICE an English muffin in half and toast. Spread a spoonful of prepared salsa overtop of each muffin half and place on a dinner plate. Top muffin ihalves with a small handful of baby spinach leaves.

PREPARE simulated ground beef according to package directions. Slice in half and place overtop of spinach leaves, allowing the heat from the patty to wilt spinach leaves slightly.

POACH two eggs and place overtop of patty. Sprinkle with a bit of shredded Cheddar cheese and serve.
