Vietnamese-Style Fresh Rolls recipe

What You Need

Dipping Sauce
1 Tbsp. sugar
2 Tbsp. each warm water and lite soy sauce
1/4 cup Kraft Smooth Peanut Butter
1/2 tsp. hot pepper sauce
Lettuce Rolls
12 large leaf lettuce leaves
180 g (about 1/5 of 900-g pkg.) vermicelli pasta, cooked, drained and cooled
3/4 lb. (340 g) frozen cooked cleaned medium shrimp, thawed
1 bunch mint leaves
1 bunch green onions (green tops only), cut into 6-inch lengths
3/4 cup matchlike English cucumber sticks
2 carrots, cut into thin sticks

Make It

DIPPING Sauce: Dissolve sugar in warm water in small bowl. Whisk in peanut butter until well blended. Add soy sauce and hot pepper sauce; mix well.

LETTUCE Rolls: Top lettuce leaves with pasta, shrimp, mint and vegetables. Fold in both sides of each leaf, then carefully roll up.

SERVE with Dipping Sauce.

Variation
For a more authentic flair, use rice paper instead of lettuce leaves. Include cilantro leaves, mango strips and pork shreds as choices for the filling. Also, serve with hoisin sauce in addition to, or instead of, the homemade Dipping Sauce. Look for these ingredients at your local Asian grocery store.
