what you need

4 squares Baker's Semi-Sweet Chocolate
2 Tbsp. butter
2 Tbsp. milk
1/2 cup icing sugar
1 pkg. (250 g) Jet-Puffed Fruit Flavoured Mini Marshmallows (about 3 cups)
1 pkg. (200 g) flaked coconut

MICROWAVE chocolate, butter and milk in large microwaveable bowl on MEDIUM 2 min.; stir until chocolate is completely melted. Add sugar; stir until well blended. Gently stir in marshmallows.

SPRINKLE 1/4 of the coconut onto sheet of wax paper. Spoon 1/4 of the chocolate mixture over coconut; roll into 8-inch log, with coconut completely covering outside of log. Repeat 3 times with additional sheets of wax paper, remaining coconut and chocolate mixture. Discard any unused coconut. Wrap logs tightly and refrigerate 3 hours or until firm (see Tip).

CUT each log evenly into 8 slices to serve. Store leftover slices in tightly covered container in refrigerator.

How to Wrap Logs Before Refrigerating
Use the wax paper to help roll the chocolate mixture into logs. Do not remove logs from wax paper before refrigerating. Wrap excess wax paper around logs, then wrap with plastic wrap. Refrigerate as directed.
Make Ahead
Logs can be stored in refrigerator up to 8 hours before cutting into slices to serve.

For easier rolling of cookies, drop spoonfuls of cookie mixture onto coconut and press into a log shape. Roll back and forth to cover log with coconut. Roll logs in wax paper and plastic wrap and refrigerate for 3 hours. The longer the logs are refrigerated, the easier it is to cut into slices. Use a serrated knife to cut the logs. There is only a thin coating of chocolate over the marshmallows.
