What You Need

1 Tbsp. oil
1 lb. (450 g) boneless skinless chicken breasts, cut into bite-size pieces
2 cups red pepper strips
1 chicken bouillon cube, dissolved in 1-1/4 cups boiling water
1/4 cup Kraft Calorie-Wise Zesty Italian Dressing
1 tsp. Dijon mustard
1-1/2 cups instant brown rice, uncooked

Make It

HEAT oil in large skillet on medium-high heat. Add chicken; cook 5 min. or until done, stirring occasionally.

STIR in next 4 ingredients; cover. Simmer 2 min. or until heated through. Stir in rice; cover. Simmer 5 min. or until rice and peppers are tender.

REMOVE from heat; let stand 5 min. or until liquid is absorbed.

Substitute
Substitute 2 cups of your favourite vegetables, such as sliced carrots, sliced onions or small broccoli florets, for the pepper strips.
Note
You need about 1-1/2 medium peppers to yield 2 cups pepper strips.
