  • Heat dressing in large nonstick skillet on medium-high heat. Add onions, celery and carrots; cook 2 min. or until crisp-tender, stirring occasionally. Spoon into slow cooker. Stir in all remaining ingredients except pasta and cheese. Cover with lid.
  • Cook on LOW 6 hours (or on HIGH 3 hours).
  • Stir in pasta; cook 10 to 15 min. or until pasta is tender. Top with cheese.

Serving Suggestion

Serve with crusty bread and a tossed garden salad.


Substitute white beans or chickpeas for the kidney beans.

Special Extra

For extra flavour, stir 8 crumbled crisply cooked bacon slices into the soup just before serving.

    Yummy I added italian sausage to my soup. (Remove sausage from casing and brown. Drain well.) Also used low sodium beef broth. Just a good hearty soup. I only had elbow macaroni on hand. Will definetly be one of our favorites.

    I found this recipe very bland compared to other minestrone soups I've made. I wanted a good slow cooker minestrone recipe and I think I will have to keep looking.

    used tins of 4 bean salad mix since I couldn't make up my mind. Used Mott's The Works Clamato juice for the water and used Beef broth since that was what I had. Everyone at work loved it. I love it. I will be making it again a lot
