Zucchini Boats

What You Need

3 zucchini (1 lb./450 g), cut lengthwise in half
3 Tbsp. Kraft Calorie-Wise Zesty Italian Dressing
1 cup chopped red peppers
1 small red onion, chopped
1-1/2 cups cooked long-grain brown rice
2 Tbsp. chopped fresh parsley
1/4 cup Kraft Double Cheddar Light Shredded Cheese

Make It

HEAT oven to 375ºF.

USE teaspoon or melon baller to scoop out zucchini flesh, leaving 1/2-inch-thick shells. Place, rounded-sides down, in single layer in microwaveable dish. Microwave on HIGH 4 min. Meanwhile, heat dressing in large skillet on medium-high heat. Add peppers and onions; cook and stir 3 to 5 min. or until crisp-tender. Stir in rice and parsley.

PLACE zucchini, cut-sides up, in 13x9-inch dish; fill with rice mixture.

BAKE 25 min. or until zucchini is crisp-tender and filling is heated through. Top with cheese; bake 5 min. or until melted.

Special Extra
Cook 1 cup sliced fresh mushrooms; add to vegetable mixture before spooning into zucchini shells and baking as directed. Or, substitute the cooked mushrooms for the chopped red peppers.
Make Ahead
Fill zucchini shells ahead of time. Refrigerate up to 2 days before baking as directed.
