  • 1. Cook rice by following package instructions BUT replace water with tomato juice; once it is cooked set aside.
  • 2. In a large pot, cook bacon ‘til crispy, remove and set aside. Remove a small amount of bacon grease, but not too much, you will need it to cook the veggies! In the same bacon pot, add veggies with remaining bacon grease 'til the veggies are soft. Add the hamburger meat to the mixture and cook 'til done. Add the rice to the veggie/meat mixture and blend.
  • 3. Then transfer the mixture to a baking dish. Top with bacon and cheese.
  • 4. Bake for no more than 10 min at 350°F just so the cheese can melt.


This recipe is a family fav.! It is also budget friendly and while there may be a little more prep time, it is well worth it! Replacing the water with tomato juice adds a ton of flavor! Don't worry about using a bit of the bacon grease to cook the veggies, after all the rice is whole grain...! You can also serve this dish with a dollop of sour cream... or just on its own! I usually serve it with a side salad or crudités for the kids!
