  • Bring 2 cups chicken stock to a boil. Add rice and set aside.
  • Meanwhile cut asparagus and mushrooms into 1/2 inch pieces. Cook in nonstick pan until tender.
  • Add chicken to pan. Add cream cheese until melted. Stir in rice. Add remaining chicken stock a little at a time until creamy, Serve hot.

Notes

You can substitute broccoli or spinach instead of using asparagus.
