  • Cream together margarine and sugar. Add egg, vanilla, baking powder, baking soda, and cinnamon. Mix well. Add in apples. Mix in 1st cup of flour, add milk if extra moisture is needed. Add in remaining flour.
  • Spoon in muffin cups lined with papers.
  • Bake at 475°F for 12-18 minutes, until toothpick comes out clean.


You can substitute in place of the apples for another in the apple family. My favorite to use are Ya Pears. The combination of Red Delicious apples and the Ya Pears is perfect. Also, sweet apples are the best to use. And I know using both baking powder and baking soda is not common, I find it works very well. Try it.

    it was great and moist. Just watch the temperature of the oven and baking time...a little burnt the first time... But delicious!
