  • Saute onion and garlic in olive oil. Remove bones from cod fish, flake and add to the saute. Set aside while you fry the fries.
  • Add fries to the saute mix. Stir well. Beat 3 eggs and pour over the mix, stir well. Cover and cook on low for 2 minutes or until egg looks cooked. Add salt, pepper and fresh chopped parsley.
  • Pour everything into a serving dish and sprinkle with some more parsley and serve!

Notes

If you like some spice you can add a red pepper hot sauce or any other hot sauce you like to the saute.
