  • Slice top off tomato and put aside. Scoops innards out of tomato and chop, then add to pot of melted butter. Add finely chopped onion to mixture in pot as well as minced cloves of garlic. Bring to boil then lower temp so ingredients can simmer. Simmer until all veggies have softened.
  • Then add 2 cups of cheddar cheese. Stir till melted then begin adding bread crumbs till stuffing is dry. Place stuffing into tomato shells then when tomato is full of stuffing put the reserved tomato top on top of tomato. If you cut out the core on the lid you can fill that hole with Parmesan cheese.
  • Then bake for half hour at 425 degrees Fahrenheit.
