  • Preheat oven to 350°F. Cover cookie sheet with foil and spray with cooking spray. Cut chicken into thin slices approximately 1/4-inch diameter and put aside. Mix peanut butter and egg and put aside. Add salt to flour.
  • Dip chicken in flour mixture, then into peanut butter and egg mixture, and then roll in chopped peanuts.
  • Cook for 35-40 min until peanuts are golden brown and chicken is cooked throughout.

Notes

Serve warm with honey mustard or with favorite BBQ sauce.
