  • Prepare the basmati rice according to the package instructions and keep warm.
  • Heat oil in a skillet on medium-high heat and add diced onion; saute until fragrant (about 2 minutes). Add minced garlic and saute for about 30 seconds and add chicken. Cook chicken stirring until all sides are opaque.
  • Add bell peppers and BBQ sauce and cook at a medium heat for 10 minutes - stirring occasionally. Add pepper and salt to taste. Lower heat and allow to simmer 5 more minutes or until cooked thoroughly.
  • Heat tortilla shells in the microwave for 40 seconds. Serve with garnishes and rice for a tasty easy meal in a tortilla shell! These are a big hit with children.

Notes

For EASY homemade salsa - in a food processor combine 1 package cherry tomatoes, 1 small shallot, 4 tablespoons lime juice, 1 teaspoon white pepper and 1 green onion. Pulse gently until ingredients are combined and a "salsa" texture is achieved - do not puree. For some heat add a few drops of Tabasco sauce before mixing.
