  • Pam spray frying pan and add oil. Heat over medium high heat, add in rice and frozen peas. Cook 5 min.
  • Make a well in the centre of the frying pan, (put peas and rice around sides of pan). Pam spray the centre and crack 2 eggs in the centre well. Cover and cook until eggs are cooked thru.
  • Chop with spatula and stir everything together. Add in soy sauce and mix thoroughly. Serve immediately.

Notes

You can substitute 2 cooked lean pork chops for the chicken breasts and it is equally as tasty!
