  • Mix together the pasta and chicken with 3 Tbsp. olive oil; to prevent sticking together, and refrigerate 3-4 hours.
  • Mix together the mayo remaining olive oil, garlic, basil and cheese. Put in sealed container and refrigerate 3-4 hours to allow flavours to mingle.
  • When ready to serve, toss the dressing with the pasta and chicken mixture. Top with a sprinkling of more cheese and basil. Serve.

Notes

Do not pre-mix this salad, the dressing tends to soak into the pasta and it loses its "Alfredo" sauce like texture.
