  • 1) Coat the bottom of a large pot with the olive oil and heat to medium/high. Add chicken (or alternate selected meat) stirring constantly. When partially cooked, add seasonings and dressing. Stir until meat is completely coated.
  • 2) Add pureed tomatoes, stir and allow to cook for 5 minutes. Add rice to mixture and stir to evenly coat rice. Add water and stir. Reduce temperature, cover and allow to simmer for 20 minutes. Be sure to stir regularly.
  • 3) Add the choice of vegetables 5 minutes into the simmering stage.


This recipe came about when we had little time to cook yet wanted a hot, home-cooked meal and simply went through the refrigerator and pantry to find ingredients that would work well together. Ultimately, we reproduced it several times, experimenting with the meat and vegetable variations. It is so easy and quick that it's virtually impossible to go wrong. The options to use whichever meat and vegetables you choose make this convertible. You can even replace the rice with a on pound package of (short) pasta (macaroni or ditali) although, pasta will require more observation and stirring during the simmer phase. Chicken can be replaced with beef, pork or veal - cut or ground, or shrimp.
