  • 1. Combine pecans, croutons, salt & pepper in large Ziploc bag and pulverize into fine crumbs.
  • 2. Dip each salmon filet first into the coleslaw dressing then into the bread crumb-pecan mixture. Place fillets on baking sheet
  • 3. Bake in preheated oven at 350°F for 15 minutes.


This started out as a completely different recipe that originally called for Dijon mustard, honey and regular bread crumbs.. I didn't have regular bread crumbs but thought croutons would work but only had the garlic variety bread type then when I realized I didn't have Dijon mustard I looked for alternatives... when I found the coleslaw dressing in the fridge I thought it might work ... To be on the safe side I did 4 fillets with this coating and 2 a different way ... just in case it didn't turn out... The salmon turned out so much better than I could have hoped for ... crunchy on the outside with a hint of sweetness with the salmon on the inside... I think this is one my new favorite ways to enjoy salmon.
