  • Preheat oven to 375ºF. In a small bowl, combine flour, baking powder and salt. Set aside. Melt 1 3/4 cups of the chocolate chips and all of the butter in a different bowl, stirring constantly until it melts.
  • In a large bowl, whisk the eggs and sugar together until light and fluffy. Stir in the espresso, and then mix in the chocolate mixture. Stir in the flour mixture and the remaining 3/4 cup chocolate chips.
  • Now scoop the batter into a greased mini muffin tins until about 1/2 full. Bake 10-15 minutes. Check to see if they're done by sticking a toothpick in. If it comes out close to clean, they're ready! If it comes out wet with batter, continue to bake.

Notes

You Can Make These as Cookies Too! Put the batter bowl in the fridge for 15-30 minutes to let the dough firm up. Completely grease a NEW cookie sheet. Make tablespoon-sized dough balls. Don't thaw the dough. Arrange dough balls 2 inches apart on the pan. Bake 7-10 minutes, checking to see if they're done by sticking a toothpick in.
