  • Wash and pick over currants, it is not necessary to take off stems. Cover with water, simmer gently until the fruit begins to lose its color and the juice is extracted. Turn into jelly bag and drain well.
  • Measure this juice and allow 1 cup sugar to each cup juice. Return the juice to the stove for ten minutes of hard boiling before adding sugar. Add sugar stir until it is dissolved. Then boil as hard as possible for three minutes, test for jelly. It comes very rapidly so start testing frequently until the mixture jells.
  • Pour at once into hot sterilized jars, place hot lids taken from hot water on top and seal - making sure the jar edge is clean.


A friend said she had checked on line with Kraft and could not find this recipe, it can be used for Red currant and other like berries. Hope you can us this. John PS if you need photo I can supply.
