  • Sautee chicken until cooked; set aside. Cut stems from lemon grass, discard leaf. Wash bamboo shoots, drain excess water. Chop red and orange peppers.
  • Place olive oil into non stick pan, put garlic and lemon grass stems in to saute (careful the garlic doe not burn). Add green curry paste (red if you want more heat). Add chicken base, peppers, chicken, fresh bay leaf and basil if desired. Simmer till peppers al dente.
  • Add coconut milk for flavour and whiteness. Serve over cooked rice or pasta.

Notes

If you don't want so much coconut, use regular milk to whiten. Can substitute rice for pasta. **Don't forget the Naan Bread, warmed. Enjoy.
