  • Preheat oven to 400°F. Rinse whole chicken, pat dry. Cut one lemon in half and rub juice all over (inside and out) of the bird. Season with salt and pepper inside and out.
  • Prick the whole lemon all over with a fork and put it inside the cavity of the chicken.
  • Place the chicken, breast side down on a cooking pan and cook for 15 minutes. Flip the bird breast side up and bake for another 45 minutes. To check for doneness, prick with a knife behind a leg. If the juices run clear, it's cooked, if not, return to the oven.

Notes

This is great served with roasted veggies or Stove Top Stuffing!
