  • 1. Heat a heavy bottom soup pot on medium heat. Add oil and butter. Saute onions, mushrooms, peppers, and celery.
  • 2. Add broth and vegetables and bring to a high simmer. Cover and cook about 12 - 15 minutes or until vegetables are just tender.
  • 3. Add tomatoes, basil and parsley. Let simmer for an additional 5 - 10 minutes. Taste and adjust for salt and pepper and add cooked pasta. Serve with warm baguette.

Notes

To make this a chicken vegetable soup, just add a cup or two of chopped cooked chicken.
