  • 1. Trim and cut chicken into small cubes. Heat large saucepan or frying pan and melt butter until frothy. Add the onions and cinnamon to the pan and fry lightly. When onions are soft, stir in the crushed garlic & ginger. Then add turmeric, chili, cilantro/coriander and sauté over MEDIUM heat (the spices are fried first to release maximum flavour).
  • 2. Add the chicken and sauté stirring constantly until chicken has turned white. Turn heat down a bit then pour in ground almonds, tomatoes & tomato paste and mix thoroughly. Cover and simmer for 20 – 30 min.
  • 3. Add yogurt (and more fresh cilantro if desired) and heat through. Serve on rice with salad or Naan bread.


*** You can use an extra Tbsp. of cilantro at the end to add with the yogurt or to sprinkle on top of the dish when it’s done. Careful with the yoghurt as it really mellows out the dish. **You can use diced, stewed or crushed tomatoes. It depends how much you like chunks of tomatoes in your dish.
