  • Blend all ingredients until fairly smooth (approx. 2 minutes) with food processor, hand mixer or stand mixer. Spoon into serving dish.
  • Cover and chill a few hours or overnight.
  • Top with cucumber and tomato just before serving. Serve cold with tortilla chips.

Notes

Chopped olives are a great add in. Make this figure friendly by substituting light ingredients. This is a crowd pleaser and addictive...make double!
