  • Combine first 7 ingredients in a small bowl. Mix well.
  • Heat oil over high heat in wok or large pan. Add chicken strips and stir-fry until chicken is almost cooked. Add onion. Stir-fry about 2 minutes, until onion begins to soften slightly.
  • Add cashews. Stir. Add peppers. Stir to mix all ingredients, adding chicken broth to pan if necessary to prevent sticking.
  • When peppers have heated through, add liquid mixture, stirring to distribute evenly. Allow to thicken, stirring to coat all ingredients. Serve wrapped in flour tortilla shells with tzatziki, feta cheese and sliced black olives if desired.
