  • Preheat oven to 350°F (180°C), Give a wok a quick spray of olive oil. Add the onion and saute on medium hot heat for one minute. Add the garlic and continue until the onions are soft.
  • Add the ham, canned tomatoes, tomato paste, and seasoning, mix well and cook on medium heat for 10 minutes. Turn heat off and set aside.
  • Combine the ricotta cheese, 60ml of the parmesan cheese and the egg whites. Mix well and set aside. Combine the retained 15ml of parmesan with the retained 60ml of mozzarella and set aside.
  • Spread the tomato sauce across the bottom of a medium baking dish and place 3 of the noodles on top of the tomato sauce. Cover the lasagna noodles with 1/2 of the sliced zucchini, 1/3 of the ham mixture, 1/2 of the ricotta cheese mixture and 1/2 of the remaining mozzarella. Cover that with 3 more noodles, the other half of the zucchini and add another third of the ham mixture, the last half of the ricotta mixture and the last half of the mozzarella cheese. Place the last 3 noodles on top of all that and cover with the last third of the ham mixture.
  • Cover with foil and bake for 40 minutes. Uncover and bake for another 10 to 15 minutes.
  • Top the lasagne with the tomato slices, the diced tomato and dust the top with the reserved parmesan mozzarella cheese mixture and broil until the cheese has melted and started to brown.

Notes

When purchasing the can product, look salt reduced products. Lasagne is comfort food. You can make it lighter but not low fat. In some recipes the fat content can reach as high as 45g per serving. This one comes in at 8.5g but sacrifices none of the flavour or size of portion. Not bad for comfort food.
