  • Mix everything together in very large pot.
  • Season with salt and pepper to taste, curry powder, fresh parsley, OXO bouillon cube (chicken or beef depending on what kind of broth used). You can add hot sauce to adjust to your taste.
  • Boil for 10 minutes, then simmer until vegetables are to your desired tenderness.

Notes

This recipe I usually make a huge pot and freeze in single serve freezable containers so it's a great time saver and wonderful for quick lunches! The soup is also delicious, I make a double batch and freeze it. My family loves it! I hope yours does too!-Lisa Stokes
