  • Scrub potatoes, leave skins on. Cut potatoes into half and half again. Boil potatoes for 20 minutes.
  • Chop onion, cook in 1 Tbsp. butter until slightly tender. Salt and pepper onions to taste, put aside.
  • Drain potato water, leaving spuds in pot. Add 1 Tbsp. butter, milk and onions. Mash. Add milk or butter until desired consistency. Salt and pepper to taste.

Notes

This is a great side dish for chicken or beef. The potato skins are more healthy for you if left on, just make sure to scrub clean. Try adding fresh herbs for added flavour.
