  • In large pot, add rhubarb, sugar, and pineapple. Stir to blend and place over high heat, bringing mixture to a boil. Reduce heat and boil hard for about 20 minutes.
  • Stir in Jell-O powders until dissolved.
  • Remove from heat and skim carefully before putting into sterilized jars.

Notes

This was a childhood favourite that my grandmother, Memere, used to make. I thought she was the only one who could make such "heavenly" jam until I realized how simple it really was...just be sure to put love into the mix!

    Rhubarb is often found in a garden, is plentiful and does not usually cost anything. The tartiness is countered by the strawberry Jello and the pineapple which results in a nice jam.
